Pruning the olive tree: key to its health and productivity

In the world of olive growing, every task has its purpose, and few are as important as pruning. This process, which combines tradition, knowledge and care, ensures that olive trees grow healthy, productive and in balance. In this article, we tell you everything you need to know about this essential practice: when it is carried out, the different types of pruning and the benefits it brings both to the tree and to olive oil production.

When is the olive tree pruned?

Olive tree pruning is mainly carried out in the winter months, once the olive harvest is over, when the trees go into vegetative rest. In Andalusia, this period usually runs from December to March, an ideal time to carry out this care without compromising the health of the tree.

Winter is perfect for pruning because the low temperatures slow down the biological activity of the olive tree, allowing it to heal wounds with less risk of infection. In addition, this preparation ensures that the tree is in optimum condition to sprout vigorously in spring, when it begins a new growth cycle.

Types of pruning: tailoring care to the objective

Not all pruning is the same. Depending on the age of the olive tree, its state of health and the grower’s objectives, there are different types of pruning which fulfil specific functions:

Formative pruning
This is carried out during the first years of the olive tree’s life, orienting it towards a strong, balanced structure. Branches that compete for space are eliminated, favouring a robust central trunk and a well-distributed crown.

Maintenance or production pruning
This is the most common pruning in adult olive trees. It seeks to maximise productivity by balancing young and old branches and eliminating those that block the passage of light and air to the interior of the tree.

Renewal pruning
When an olive tree shows signs of exhaustion, more drastic pruning is applied to stimulate the growth of new productive branches, thus ensuring its long-term vitality.

Regeneration pruning
In extreme situations, such as after frost or fire damage, this pruning aims to bring the tree back to life, allowing it to sprout from its base.

Benefits of pruning

Pruning olive trees brings multiple benefits, not only to the tree but also to the quality of the olive oil produced:

  • Promotes light and aeration: a well-pruned canopy allows light to reach all branches, improving photosynthesis and reducing the risk of disease.
  • Improves fruit quality: by eliminating old branches, the tree concentrates its energy on the young branches, obtaining higher quality fruit.
  • Facilitates harvesting: a balanced and open tree structure allows easier access during harvesting.
  • Prolongs the life of the tree: by periodically rejuvenating the olive tree, its health and productivity is ensured for decades, if not centuries.

Tools and techniques used

From scissors and saws to power tools, each tool is adapted to the thickness and location of the branches. In our olive grove, we use techniques that respect the natural structure of the olive tree, guaranteeing a balance between tradition and effectiveness.

Fun facts about pruning

  • Olive pruning is an ancient practice, documented in Roman and Arabic texts as a key technique for maximising production.
  • Each cut in the trunk of the olive tree tells a story of care and tradition, visible for years as scars that tell of its relationship with those who cultivate it.
  • A well-pruned olive tree can live for over a thousand years, demonstrating how this care influences both its productivity and longevity.
  • In Roman times, pruning followed a calendar closely linked to the lunar phases, as it was believed that the moon influenced the growth of the branches and the quality of the fruit.
  • A badly pruned olive tree can produce up to 30% less olives per year, highlighting the importance of this process to guarantee an abundant harvest.
  • Although it may take several years to reach peak performance after significant pruning, the results are always worth the wait.

At MARE OLEUM, we understand the importance of each task in the care of the olive grove. Pruning not only guarantees the health of the tree, but also contributes directly to the exceptional quality of our extra virgin olive oil (EVOO).
